Fresh Corn & Bean Salad

This recipe is one of my favorites! It is an easy and delicious side dish (or main course) that you can prep and spice up your meals throughout the week with. It's also makes for a yummy salsa to enjoy with tortilla chips at a party. Being that it is vegan and vegetarian, you'll be able to please everyone! It's also SO fresh!


Here’s What You Need:

1 can of Black Beans

1 can of Chickpeas (garbanzo beans)

1 can of Sweet Yellow Corn

Half of a Red Onion (finely chopped)

1 whole Zucchini (diced)

1 whole cucumber (diced)

1 whole Green Bell Pepper (diced)

1/2 cup of Tomatoes (diced)

1/4 cup Scallions (finely chopped)

1/4 cup Cilantro (finely chopped)

1/2 tsp Salt (or to taste)

1/2 tsp Black Pepper (or to taste)


Steps To Make:


1. Gather all of your ingredients and prep them. The black beans, chickpeas and yellow corn need to be opened and rinsed in a strainer. All veggies are chopped or diced, think salsa-sized portions. You want everything to be small enough so you can get each ingredient in every bite.

2. Get a large bowl and mix all of the ingredients together.

3. Add salt and pepper to taste!

4. Enjoy! And store leftovers in a big tupperware.


Here's some ways I like to enjoy it:

  • Out of a bowl, by itself! (It's that good!!)

  • Add your favorite hot sauce and enjoy it as a salsa, with some tortilla chips!

  • In a salad on top of chopped romaine with grilled chicken!
