Breakfast (or brunch) has got to be one of my favorite meals of the day. Unfortunately the things that I like the most on the breakfast menu are usually the most sugar-filled and calorically dense options: pancakes, waffles, and FRENCH TOAST. While I like to enjoy these things in moderation, I can't have them every day... or can I?
My love of breakfast foods has caused me to find ways to have my cake and eat it too. So I have created a Healthier French Toast that is super easy to make and will satisfy that breakfast craving without leaving you feeling like you completely over-indulged!
Here’s What You Need:
4 Pieces of Bread (I used a 45 calorie per slice bread)
2 Whole Eggs
1/4 Cup Egg Whites
1/2 cup of Almond Milk
1 tsp Vanilla Extract
1 tsp Cinnamon
2 tsp Brown Sugar, unpacked
2 tsp Powdered Stevia
---------------------------------------------
Optional Topping Ideas:
1 Serving of Vanilla Protein Pudding (check out the recipe here)
1/2 Cup warm Fruit! (berries work best, I think)
Maple Syrup
Nut Butter
Sliced Banana
Chocolate Chips
Powdered Sugar
Steps To Make:
1. Whisk together the egg whites, egg, almond milk, vanilla, and stevia.
2. Add the pieces of bread to the mixture and allow to sit for 1-2 minutes. Letting them sit allows the bread to soak up more of the egg mixture and I think it makes it taste better!
3. Place the soaked bread on to a greased griddle or frying pan and cook for about 2-3 minutes on one side, then flip. If you want yours to be more "done" give it a second flip for each side!
4. Make a half OR 1 full serving of the Protein Pudding to add to the middle of the french toast to make a stuffed version!
5. Add any of the optional toppings!
6. Enjoy the hell out of your yummy breakfast! :)
