I am a BIG fan of all things pumpkin in the fall. Don't get me wrong, I do love all things apple too... but if I had to choose between the two, it would be pumpkin. If you're a lover of pumpkin like me, you have to try this dip.
Here’s What You Need:
Blender or Food Processor
1 can of Garbanzo Beans (ChickPeas), rinsed & drained
1 cup Canned Pumpkin
1/2 cup Vanilla Protein Powder (I used Women's Best Vegan Vanilla)
1/2 cup of Almond Milk
2 tbsp Pumpkin Pie Spice
1 tsp Vanilla Extract
1 tbsp Liquid Stevia or Maple Syrup

Optional:
1/4 cup crushed pecans or walnuts
1/4 cup mini chocolate chips
Steps To Make:
1. Rinse and strain the chickpeas.
2. Add chickpeas, pumpkin, almond milk, PP spice, vanilla, and stevia/maple syrup to blender and blend on high. Blend all ingredients (minus the choc chips and nuts) together until you get a custard-like consistency. If you are having issues getting a good consistency, add splashes of almond milk until desired texture is reached.
3. Stir in the chocolate chips and/or nuts!
4. Enjoy! And store leftovers in a tupperware.
Here's some ways I like to enjoy it:
Out of a bowl, by itself! (It's that good!!)
With pretzels or pretzel thins- this is such a good sweet and salty combo!
On top of toast - weird but good!
On top of your oatmeal!
